Easy Baked Tilapia With Tomatoes And Olives Recipe:
Ingredients:
- 2 pounds - Tilapia Filets, Rinsed and Patted Dry
- 20 - Green Olives with Pimientos or Pitted Black Olives, Sliced
- 4 Cloves - Garlic, Chopped Fine
- 1 Large Can - Stewed Tomatoes with Juice
- 2 Tablespoons - Parmesan Cheese, Grated
- 1-1/2 Tablespoon - Seafood Seasoning
- Salt - To taste
- Freshly Ground Black Pepper
- Fresh Parsley - Chopped (Optional)
Directions:
- Preheat oven to 375 F.
- Arrange the Filets in a large, glass casserole dish and pour the tomatoes and their juice over Tilapia Filets.
- Sprinkle Filets with seafood seasoning, salt, and pepper to taste, followed by olives.
- Grate the Parmesan cheese over the top.
- Bake fish uncovered in the oven until just opaque in center (about 20-25 minutes, for Filets about 1" thick).
- Remove from oven and sprinkle with fresh parsley if desired.
- Serve with your favorite side dish.
